The sun is shining, temperatures soaring and it’s starting to feel a lot like summer! With our evening training sessions getting a whole lot hotter, what better way to cool down than with delicious high-protein, low-calorie ice lollies? These Pink Strawberry with Rhubarb Ice Pops from Alpro not only have a deliciously creamy and fruity flavour but are dairy-free, low in saturated fat and packed with 2.1g of protein! Preparation Time: 5 mins
Freezing Time: Allow 3hrs minimum for freezing
time
Serves: Makes 6 lollies
Ingredients:
200g strawberries (cut into quarters)
1 tbsp icing sugar
300g Alpro Strawberry with Rhubarb
alternative to yogurt
Method:
– Whizz together 150g of the quartered strawberries and the icing sugar using a hand
blender
– Add the remaining strawberries to the
strawberry purée and mix together
– Pour the strawberry mixture half way up the
lolly moulds and top up with Alpro Strawberry
with Rhubarb
– Leave for at least 3 hours, until lollies are
frozen
